Kheer is a rice pudding from India, made by basmati rice, milk, sugar, and dry fruits; it is flavoured with cardamom, raisins, saffron, cashews, pistachios or almonds. It is typically served after meal as a dessert. It tastes heavenly. And we will learn how to make it, today !
Here are the necessary ingredients needed to make some yummy Kheer.
Ingredients :
- 1/2 liter Whole or Cream Milk
- 1/2 cup sugar
- 1 tb of oil or ghee
- 1/4 cup Basmati Rice (full or broken)
- 4 to 5 sliced pistachios
- 4 to 5 sliced cashew nuts
- 4 to 5 sliced almonds
- 12 to 15 raisins
- 4 to 5 saffron strands (few pinchs of kesar)
- 1 tb of green cardamom seeds
Now that we have gathered the materials, lets get cooking!
I am going to guide you step by step with pictures to prepare you own delicious Kheer!
Procedure :
1.) Rinse the rice thoroughly and get rid of the starch. Add some clean water and leave the rice to soak for few minutes. Keep it aside for now.
2.) In the mean time, start boiling the milk.
3.) While the milk is boiling, add oil or ghee in a big frying pan and fry the rice for 2 or 3 minutes.
4.) Now add milk, cardamom seeds, and cook it on low flame till rice gets very soft and tender.
5.) Stir thoroughly time to time and cook until theres about a 1/4 of the milk left.
6.) Now add sugar, sliced pistachios, cashew nuts, almond, and raisins.
7.) Stir properly until everything mixes evenly.
8.) Check sweetness, and texture consistency.
9.) Now put Kheer (rice pudding) in a bowl or plate (as desired), add saffron, and set it in room temperature till it cools down to normal temperature.
10.) Now refrigerate the Kheer for approximately 30 minutes (as desired).
11.) Now you delicious Kheer is ready to be served and enjoyed !
12.) You can add more dry fruits on top for garnishing.
